A chasing dog aims where you are, not where you will be, and the manual's technique uses exactly that. Slow down and downshift as you approach, let the dog commit to its intercept line, then accelerate briskly away so the intercept point passes behind you.

What the rule forbids is everything instinct suggests: kicking at the dog, which costs you control of the machine for nothing, and swerving wide around it into the oncoming lane. Feet stay on the pegs, eyes stay on your path, and the throttle does the escaping.
